Ingredients
Crust:
- ½ cup melted vegan butter
- 2 cups chocolate wafer cookies
- 2 tbsp almond milk
- ½ cup granulated sugar
Filling:
- 16 oz silken tofu
- 9 oz dairy-free chocolate chips
- ¼ cup granulated sugar
- ¼ tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat Oven: Heat oven to 350°F (175°C).
- Prepare Crust: Combine butter, crushed chocolate wafers, almond milk, and sugar. Press into a 9-inch pie pan.
- Bake Crust: Bake for 10 minutes, then cool.
- Make Filling: Blend tofu, sugar, salt, vanilla, and melted chocolate until smooth.
- Assemble: Pour filling over cooled crust and refrigerate for at least 2.5 hours.
- Garnish & Serve: Garnish with extra wafer crumbs or chocolate shavings and serve chilled.
