Vegan Spinach Mushroom Quesadillas

Ingredients

2 large tortillas (use gluten-free if needed)

1 cup mushrooms, sliced

2 cups fresh spinach

1 cup vegan shredded cheese (mozzarella or cheddar style)

Instructions

Heat oil in a skillet over medium heat. Add garlic and sauté until fragrant.

Add mushrooms and cook until tender, about 4–5 minutes.

Toss in spinach and cook until just wilted. Season with salt and pepper.

Assemble quesadilla: Place one tortilla in a pan, sprinkle vegan cheese, add spinach-mushroom filling, top with more cheese, then place the second tortilla on top.

Cook on each side for 3–4 minutes until golden brown and crispy.
