Vegan Spinach Mushroom Quesadillas

Golden, crispy tortillas packed with garlicky spinach, juicy mushrooms, and gooey vegan cheese — these quesadillas are comfort food done right. Perfect for lunch, dinner, or even a late-night snack!


Ingredients

  • 2 large tortillas (use gluten-free if needed)

  • 1 cup mushrooms, sliced

  • 2 cups fresh spinach

  • 1 cup vegan shredded cheese (mozzarella or cheddar style)

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • Salt & pepper, to taste


‍ Instructions

  1. Heat oil in a skillet over medium heat. Add garlic and sauté until fragrant.

  2. Add mushrooms and cook until tender, about 4–5 minutes.

  3. Toss in spinach and cook until just wilted. Season with salt and pepper.

  4. Assemble quesadilla: Place one tortilla in a pan, sprinkle vegan cheese, add spinach-mushroom filling, top with more cheese, then place the second tortilla on top.

  5. Cook on each side for 3–4 minutes until golden brown and crispy.

  6. Slice & serve with salsa, guacamole, or vegan sour cream.
