Vegan Maple Lime Roasted Cauliflower & Chickpeas

Ingredients:

1 medium cauliflower (cut into florets)

1 can chickpeas (rinsed & drained)

1 red onion (sliced)

2 tbsp olive oil

2 tbsp maple syrup

Juice & zest of 1 lime

2 cloves garlic (minced)

1 tsp smoked paprika

1/2 tsp cumin

Salt & black pepper to taste
Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet.

In a large bowl, whisk olive oil, maple syrup, lime juice & zest, garlic, paprika, cumin, salt, and pepper.

Add cauliflower, chickpeas, and onion. Toss until evenly coated.

Spread mixture on the baking sheet in a single layer.

Roast for 25–30 minutes, flipping halfway, until golden brown and slightly crispy.
