Vegan Maple Lime Roasted Cauliflower & Chickpeas

Sweet, tangy, and perfectly roasted – this cauliflower and chickpea combo is a wholesome plant-based dish you’ll want on repeat! The maple-lime glaze gives it a bold burst of flavor, while roasting makes everything crispy and caramelized.

Ingredients:

  • 1 medium cauliflower (cut into florets)

  • 1 can chickpeas (rinsed & drained)

  • 1 red onion (sliced)

  • 2 tbsp olive oil

  • 2 tbsp maple syrup

  • Juice & zest of 1 lime

  • 2 cloves garlic (minced)

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • Salt & black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet.

  2. In a large bowl, whisk olive oil, maple syrup, lime juice & zest, garlic, paprika, cumin, salt, and pepper.

  3. Add cauliflower, chickpeas, and onion. Toss until evenly coated.

  4. Spread mixture on the baking sheet in a single layer.

  5. Roast for 25–30 minutes, flipping halfway, until golden brown and slightly crispy.

  6. Serve warm as a main dish, side, or bowl topping.

Tips:

  • Add fresh cilantro for a zesty garnish.

  • Serve with quinoa, rice, or warm pita for a complete meal.

  • Sprinkle chili flakes for a spicy kick.
