Ingredients:

  • 1 cup almond butter (or peanut butter / sunflower seed butter for nut-free)
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup coconut sugar (or brown sugar)
  • 2 flax eggs
    (= 2 tbsp ground flaxseed + 6 tbsp water — see below)
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

Optional: 1/3 cup vegan chocolate chips (for extra fudginess)


Flax Egg Instructions:

  1. In a small bowl, mix 2 tbsp ground flaxseed with 6 tbsp water.
  2. Stir and let sit for 5–10 minutes until it forms a gel-like texture.
  3. Use in place of eggs in the recipe.

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a medium bowl, combine flax eggs, almond butter, cocoa powder, sugar, vanilla, and baking soda. Mix until fully smooth and thick.
  3. Fold in vegan chocolate chips if using.
  4. Spread the batter evenly into the lined pan. Smooth the top with a spatula.
  5. Bake for 22–26 minutes, or until the top is crinkly and a toothpick inserted comes out with moist crumbs.
  6. Let cool completely in the pan before slicing — this helps them set up perfectly fudgy.
