Vegan Flourless Brownies

Ingredients:
- 1 cup almond butter (or peanut butter / sunflower seed butter for nut-free)
- 1/2 cup unsweetened cocoa powder
- 2/3 cup coconut sugar (or brown sugar)
- 2 flax eggs
(= 2 tbsp ground flaxseed + 6 tbsp water — see below) - 1 tsp vanilla extract
- 1/2 tsp baking soda
Optional: 1/3 cup vegan chocolate chips (for extra fudginess)
Flax Egg Instructions:
- In a small bowl, mix 2 tbsp ground flaxseed with 6 tbsp water.
- Stir and let sit for 5–10 minutes until it forms a gel-like texture.
- Use in place of eggs in the recipe.
Instructions:
- Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- In a medium bowl, combine flax eggs, almond butter, cocoa powder, sugar, vanilla, and baking soda. Mix until fully smooth and thick.
- Fold in vegan chocolate chips if using.
- Spread the batter evenly into the lined pan. Smooth the top with a spatula.
- Bake for 22–26 minutes, or until the top is crinkly and a toothpick inserted comes out with moist crumbs.
- Let cool completely in the pan before slicing — this helps them set up perfectly fudgy.
