This creamy, dreamy vegan berry ice cream is the perfect refreshing treat! Made with real berries and dairy-free ingredients, it’s naturally sweet, light, and absolutely delicious. You don’t need an ice cream machine—just simple ingredients and a blender!


Ingredients

  • 2 cups frozen mixed berries (strawberries, raspberries, blueberries, or blackberries)

  • 1 can (13.5 oz) full-fat coconut milk (chilled overnight)

  • 3–4 tbsp maple syrup or agave syrup (adjust to sweetness)

  • 1 tsp vanilla extract

  • A pinch of salt

  • Fresh berries for garnish


‍ Instructions

  1. Prepare coconut cream: Open the chilled coconut milk can and scoop out the thick cream from the top (leave watery part behind).

  2. Blend: In a high-speed blender, add frozen berries, coconut cream, maple syrup, vanilla, and salt. Blend until smooth and creamy.

  3. Chill & set: Transfer mixture into a freezer-safe container. Cover and freeze for 4–6 hours, stirring halfway through for creaminess.

  4. Serve: Scoop into bowls, swirl with extra coconut whip, and top with fresh berries.
