Ingredients

Pudding:

  • 2 ripe bananas (blend)
  • 1 can coconut milk (full-fat)
  • 1/4 cup maple syrup
  • 1/4 cup cornstarch
  • 1/2 tsp vanilla extract
  • Pinch of salt

Crumble:

  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 2 tbsp coconut sugar
  • 2 tbsp melted coconut oil
  • 1/4 tsp cinnamon

Directions

Step 1: Make the Pudding

  1. Blend the bananas, coconut milk, maple syrup, vanilla, and salt.
  2. Transfer to a saucepan and whisk in the cornstarch.
  3. Stir over medium heat until thickened (5-7 mins). Remove from heat and let cool slightly.
