Easy Vegan Oatmeal Apple Mini Loaves ✨
These soft, lightly sweet mini loaves are packed with wholesome oats and fresh apples – perfect for breakfast, snacks, or even a lunchbox treat. Super easy to make and freezer-friendly!
Ingredients (makes about 10–12 mini loaves)

1 cup rolled oats

1 cup whole wheat flour (or all-purpose)

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

Pinch of salt

1/3 cup coconut sugar (or brown sugar)

1 cup unsweetened applesauce

1/3 cup plant-based milk

2 tbsp coconut oil (melted) or neutral oil

1 tsp vanilla extract

1 medium apple, finely chopped or grated
Instructions

Preheat oven to 180°C (350°F) and grease or line a mini loaf tray (or muffin tin).

Mix dry ingredients: In a bowl, combine oats, flour, baking powder, baking soda, cinnamon, salt, and sugar.

Mix wet ingredients: In another bowl, whisk applesauce, milk, oil, and vanilla.

Combine & fold in apple: Add wet to dry and gently fold. Stir in chopped apple.

Bake: Spoon the batter into mini loaf molds and bake for 18–22 minutes, or until a toothpick comes out clean.

Cool & enjoy: Let them cool before removing from molds.
