Easy Vegan Oatmeal Apple Mini Loaves ✨

These soft, lightly sweet mini loaves are packed with wholesome oats and fresh apples – perfect for breakfast, snacks, or even a lunchbox treat. Super easy to make and freezer-friendly!


Ingredients (makes about 10–12 mini loaves)

  • 1 cup rolled oats

  • 1 cup whole wheat flour (or all-purpose)

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp cinnamon

  • Pinch of salt

  • 1/3 cup coconut sugar (or brown sugar)

  • 1 cup unsweetened applesauce

  • 1/3 cup plant-based milk

  • 2 tbsp coconut oil (melted) or neutral oil

  • 1 tsp vanilla extract

  • 1 medium apple, finely chopped or grated


‍ Instructions

  1. Preheat oven to 180°C (350°F) and grease or line a mini loaf tray (or muffin tin).

  2. Mix dry ingredients: In a bowl, combine oats, flour, baking powder, baking soda, cinnamon, salt, and sugar.

  3. Mix wet ingredients: In another bowl, whisk applesauce, milk, oil, and vanilla.

  4. Combine & fold in apple: Add wet to dry and gently fold. Stir in chopped apple.

  5. Bake: Spoon the batter into mini loaf molds and bake for 18–22 minutes, or until a toothpick comes out clean.

  6. Cool & enjoy: Let them cool before removing from molds.

  • Add raisins, walnuts, or pecans for extra texture.

  • Use maple syrup instead of sugar for a refined sugar-free option.
