Diabetic Strawberry Yogurt Dessert (No Bake)

Ingredients (1–2 servings)

  • 1 cup fresh strawberries, sliced

  • ½ cup plain Greek yogurt (unsweetened, low-fat or full-fat)

  • ½ tsp vanilla extract

  • Sweetener to taste (stevia or monk fruit)

  • Optional toppings:

    • Chopped almonds or walnuts

    • Chia seeds

    • A sprinkle of cinnamon

Instructions

  1. Lightly mash half of the strawberries with a fork.

  2. Mix mashed strawberries with yogurt, vanilla, and sweetener.

  3. Fold in remaining sliced strawberries.

  4. Chill 10 minutes or eat immediately.

  5. Add nuts or seeds on top if desired.


Quick Strawberry Chia Pudding (Extra Fiber)

Mix &f:

  • ½ cup unsweetened almond milk

  • 1½ tbsp chia seeds

  • ½ cup chopped strawberries

  • Stevia to taste

Refrigerate 2–4 hours → thick, pudding-like, great for blood sugar control.
