Crispy Vegan Roasted Cauliflower ✨

Crispy, golden, and absolutely addictive – this roasted cauliflower makes the perfect snack, appetizer, or side dish! Pair it with your favorite dipping sauce for the ultimate treat.

Ingredients:

  • 1 medium head of cauliflower (cut into florets)

  • ½ cup panko breadcrumbs (or gluten-free)

  • ¼ cup almond flour (or regular flour)

  • ½ cup unsweetened plant-based milk

  • 2 tbsp nutritional yeast

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp olive oil (or spray)

Instructions:

  1. Preheat oven to 220°C (425°F) and line a baking tray with parchment paper.

  2. Make batter: In a bowl, whisk almond flour, plant milk, and 1 tbsp olive oil until smooth.

  3. Make coating: In another bowl, mix breadcrumbs, nutritional yeast, garlic powder, paprika, salt, and pepper.

  4. Dip each cauliflower floret into the batter, then coat with the breadcrumb mix.

  5. Arrange on the tray, drizzle (or spray) with oil, and bake for 25–30 minutes, flipping halfway, until golden and crispy.

  6. Serve hot with vegan ranch, chipotle mayo, or tahini sauce.

Tips:

  • Air-fry for 12–15 minutes at 200°C (400°F) for extra crunch.

  • Add chili powder or cayenne for a spicy kick.

  • Makes a great side dish, party snack, or healthy “nugget” alternative!
