Crispy Vegan Parmesan Zucchini Rounds

Ingredients:

2 medium zucchinis (sliced into 1/4-inch rounds)

1/2 cup breadcrumbs (panko or homemade)

1/4 cup vegan parmesan (store-bought or homemade)

1/2 tsp garlic powder

1/2 tsp paprika

Salt & black pepper to taste

2 tbsp olive oil (or spray)
Instructions:

Preheat oven to 220°C (425°F) and line a baking tray with parchment paper.

Prep coating mix: In a bowl, combine breadcrumbs, vegan parmesan, garlic powder, paprika, salt, and pepper.

Coat zucchini: Lightly brush zucchini slices with olive oil (or spray), then dip into the breadcrumb mixture to coat evenly.

Bake: Arrange on tray in a single layer. Bake 20–25 minutes, flipping halfway, until golden and crispy.
