Crispy Vegan Parmesan Zucchini Rounds

Crispy, golden, and cheesy – these zucchini rounds are the ultimate guilt-free snack or side dish! Perfect for dipping or serving with your favorite vegan pasta dish.


Ingredients:

  • 2 medium zucchinis (sliced into 1/4-inch rounds)

  • 1/2 cup breadcrumbs (panko or homemade)

  • 1/4 cup vegan parmesan (store-bought or homemade)

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • Salt & black pepper to taste

  • 2 tbsp olive oil (or spray)


‍ Instructions:

  1. Preheat oven to 220°C (425°F) and line a baking tray with parchment paper.

  2. Prep coating mix: In a bowl, combine breadcrumbs, vegan parmesan, garlic powder, paprika, salt, and pepper.

  3. Coat zucchini: Lightly brush zucchini slices with olive oil (or spray), then dip into the breadcrumb mixture to coat evenly.

  4. Bake: Arrange on tray in a single layer. Bake 20–25 minutes, flipping halfway, until golden and crispy.

  5. Serve & enjoy: Garnish with fresh parsley and serve hot with marinara, vegan ranch, or hummus dip.


Tips:

  • Air-fry for extra crispiness (10–12 minutes at 200°C/400°F).

  • Add nutritional yeast for a cheesier flavor.
