Crispy Vegan Chickpea Nuggets: A Protein-Packed Snack

Golden, crunchy on the outside and soft on the inside — these vegan chickpea nuggets are the perfect guilt-free comfort food! High in protein, fiber, and flavor, they’re a plant-based alternative to traditional nuggets that both kids and adults will love.


Ingredients

  • 2 cups cooked chickpeas (or 1 can, drained & rinsed)

  • 1 medium potato (boiled & mashed)

  • 2 cloves garlic (minced)

  • 1 small onion (finely chopped)

  • ½ cup breadcrumbs (or crushed cornflakes for extra crunch)

  • 1 tbsp nutritional yeast (optional, for cheesy flavor)

  • 1 tsp paprika

  • ½ tsp turmeric

  • ½ tsp cumin

  • Salt & black pepper to taste

  • 1 tbsp olive oil (optional, for pan-frying)


‍ Instructions

  1. Mash chickpeas & potato together until smooth.

  2. Mix in garlic, onion, spices, nutritional yeast, and a bit of breadcrumbs until you get a dough-like consistency.

  3. Shape into nuggets (oval or round).

  4. Coat each nugget in breadcrumbs or crushed cornflakes for that irresistible crisp.

  5. Cook your way:

    • Air-fry or bake at 200°C (390°F) for 20–25 minutes until golden.

    • Shallow-fry in a pan with a little oil until crispy on all sides.


Serving Ideas

  • Pair with vegan ranch, BBQ sauce, or spicy ketchup.

  • Serve as a snack, in a wrap, or as a protein side for salads.
